IMPORTANT MESSAGE ON PURCHASING PACKS:

Just a heads up: There's a bug in the store which can completely wipe out everything you've unlocked - all characters, weapons, and items. The most common way this happens appears to be readying for a game in the lobby, then accessing the store. However, there have been reports of it happening from any store access, so there might not be any surefire way to avoid the bug. So far, the only response from BioWare is that they're investigating the issue. I haven't contacted customer support, but reports from those who have seem to indicate that there will be no reimbursements, even for those who spent real money on packs. http://social.bioware.com/forum/1/to...ndex/9653611/1

Instead it works like a weird unlock ranking system. You select the class first, then the race you have unlocked, hence why not all races are playable for all classes.

It's weird and silly. Hopefully they change it.

I dunno, it makes sense to me seeing that humans are the only race to be able to play ANY class. We knew there was going to be some sort of unlocking/ranking up/RPG element to the MP component, so it makes sense that humans are the 'default loadout' and you unlock different loadouts/powers/weapons with each new race.
