In the platformers, when you pick up the mushroom, your movement speed is unchanged. In our universe, this is impossible, because of the law of conservation of momentum. If your mass suddenly increases, your velocity should go down by the same degree to conserve your momentum.
So clearly, the effect of the mushroom in the Mario-verse is to instantaneously increase your momentum by some factor. In the platformers, Mario uses this power to increase mass while conserving speed. In the kart games, where speed is more important, he maintains mass but increases speed instead.
