Haven't read through the entire thread but if France then early-14th century would make for a decent backdrop and could be a nice bridge between the late 12th Century 3rd Crusade world of Altair and the 15th Century Italy of Ezio.
Such a story could chart the rise of the Templars from their inception just prior to Altairs time in the Holy Land to dominance of international trade routes just prior to their apparent demise in 1307 at the hands of King Philip IV and Pope Clement V on Friday 13th October.

How about call of duty X assassins creed. World war II setting.
An AC game based on the last days of the Shogunate/Edo period of Japan would bring me back to the series, but they would need to make combat a little more interesting as well.
Having it take place in Ancient China would force the developers to revamp there combat system to be better.... I think.
