Also did you know that broccoli is the exact opposite of soy in that it helps get rid of excess estrogen? So drop the soys and up the brehccoli, unless you want to sport some DD-size breasts.

Of all the things in this thread, this is the thing I would be most likely to eat:

Homemade Neopolitan-style pizza with fermented dough, a big handful of broccoli rabe sauteed for five minutes in a tablespoon or two of olive oil in the cast-iron skillet, and shredded smoked mozzarella. Took about 4 mins total cook time.

Hopefully the cheese would drown it out.

So, hey, if anyone wants to get me a good-quality pizza that has broccoli on it, I'll give it a shot.

What's the best way to prepare broccoli for the purpose of retaining nutrients? I read that oversteaming or cooking about any vegetable improperly, too long, etc. can destroy the nutrient content. I like broccoli period, I think that shit is dope and I like it best when it's dry but really hot like how its served at some restaurants.

I just started working out and dieting and vegetables are now a huge part of my diet and I'm just exploring the science behind it all and was actually surprised to see how improper preparation can actually weaken the nutritional content.

I would think steaming is the best way. I don't know how you lose much that way. Even if you "oversteam," where are the nutrients going? Unless they just break down into other things from the heat, I guess.

I never boil, though. Mushy useless stuff where things actually do wash away.

I usually steam but I let it go for like 15-20 minutes. I read that more than 5 minutes in the steamer can begin the process of vaporizing some of the nutrients.

I had some frozen broccoli sitting in my freezer, threw it in the microwave, melted butter over it, added salt and pepper, and had it as my side dish with my dinner tonight. Even lazy broccoli recopies are delish

I did! I was feeling in need of fiber tonight so I had quinoa with paprika, oregano, fresh basil, roasted broccoli and tomatoes, and sliced avocado on top. So, so tasty and healthy.

Hi Brandon! If you click the WHFoods link(s) in the OP I believe they have some good info on this, but yes, to the best of my knowledge your best bet is to steam the broccoli or blanch it (so not boiling in the traditional sense per se, but a very brief dip in just-boiling water).

I also want to say, this topic is probably one of the worse things that I've had my name attached to.

Soo.. people in Japan eat a metric fuckton of soy per person per day, from soy sauce to tofu to soy milk to edamame its just everywhere. And yet, no one in the country has boobs. Explain?
 
Well, it could help explain their birth rate issues.

Interesting thought, but wouldn't you have to show an increase in soy consumption that matches the declining birthrate to even be able to show a correlation (let alone a causation)? I have no idea if the amount of soy consumed by Japanese people has gone up or down in the last 50 years, but I know they've been eating tofu for a long time at least.

And really, this birthrate talk is just distracting from the real issue, soy's effect on boobs.

If it helps any, in addition to not liking broccoli, I also don't like soy.
Of course, I'm also not Japanese.

Broccoli is a real mans food. I don't really like it raw, but give it to me in any other way and I'm there. Spinach is a close second.

Timely thread. I just cut 2 gigantic heads of delicious broccoli from my little garden earlier today and had some with dinner.

Good stuff. Thanks. I'll probably stick to steaming. I like steaming for some reason. I think it's just because I bought one and like actually putting things I spend money on to good use :p

No, but seriously, I don't think Japanese people eat that much soy. It's like saying Americans consume lots of MacDonalds everyday, only the very unhealthy do.

It was an English flag, for the World Cup (which England crashed out of spectacularly - which was expected as soon as they put Roy in charge of that team, but nonetheless). World Cup's over now though, so back to my regular avatar.

I just want to thank Maxc for reintroducing me to this wonderful veggie. I tend to eat a bowl of salad a day alongside my supper, the salad 90% of the time consists of cucumber, lettuce, onion, and spring onion with a dash of lime and that's my daily veggie intake in a nutshell. I was getting tad tired of eating the same thing everyday, so after bumping to this, I went out and grabbed handful of broccoli and roasted it in the oven alongside my steak. It was utterly scrumptious.

Gotta admit, I'm a little surprised that no one took the bait and posted one of the many many pieces of photographic evidence out there on the internet proving that at least anecdotally the bolded portion above isn't true for every single Japanese person.

bog standard broccoli is awesome but broccolini is on another level. way easier to cook consistently and perfect for pastas/stir fries. great in a breakfast fry up too.

The broccolini is often misidentified as baby or young broccoli because of its bright green broccoli-like floral head, while in fact it is actually a cross between broccoli and Chinese kale (otherwise known as gai-lan). This vegetable, sometimes found with small yellow flowers, was first developed in Yokohama, Japan in the 1980s.

I just ate some raw broccoli with dip yesterday. So good. I legitimately enjoy the taste of a number of raw vegetables when done right.
 
But you cook the frozen stuff, right? Because the frozen raw is no good. :(

Why is it not good, do you mean the taste? Personally I don't mind the taste, I thaw frozen veggies(major part almost always broccoli) all the time for my lunch at work. Been doing that ever since I read how many nutrients get destroyed microwaving vegetables. Over 90% of micro-nutrients or something like that.

At home I boil or fry mostly. that kills around 30%, which I can live with.

(I am too lazy to chop up fresh veggies for lunch every day. Also it's cheaper with frozen.)
