I asked before but didnt get a real answer: what is going on with Switch stock? Why are they shipping so few consoles with the brand being so popular? Shipping less than 2 million consoles in a quarter is kind of shocking for such a popular item, there must be some sort of issue with manufacturing, right?

they're having problems to stock components for the console.
NAND memory especially seems to be a big issue as Apple is also after those chips

Flash memory shortage slows down the production pipeline. Toshiba, the manufacturer, can't produce enough.

There is an industry-wide shortages of flash storage, so many companies are competitie for these parts, and of course Apple gets all it wants by default. As a result, ramping up production is hard for Nintendo.

Supply chain was being gobbled up by Apple manufacturing the next iPhone. It seems that Apple is done manufacturing and stockpiling so more factories are now freed up for other companies. Preliminary reports via media create thread and various stocking websites (USA) are seeing an increase in stock as a result.

Won't be surprised if they double up production to 4M units in the second quarter, and then double that again for the very important 3rd quarter. That brings them in line with the rumoured forecast of 16M units for the FY.
