Resident Evil 4 on PS2, it ran solid and the extra content made up the worse graphics and low quality FMVs on the console. Plus I think it has native widescreen rather than the cut bars they did on the Gamecube.
Saints Row 2 as much it is shit on PC, can run at acceptable ish levels on today hardwares, and it's always worth revisiting on any platform.
Hitman Blood Money on PS2, while it's a crossgen game and there's only a few enhancements on PC and Xbox 360, it ran solid and perhaps the most impressive PS2 title ever alongside RE4.
Virtua Cop 1 and 2 on Saturn and PC IMO are surprisingly trade offs just like Resident Evil 4 on PS2. The soundtrack on CD was much better than the Model 2 boards, and the polycount cut was small compared to other games. VC1 was very near perfect conversion, and VC2 had some artistic changes that ended up being better than the arcade version, such as in vehicles and enemies. The Dreamcast port of VC2 is awful in the art direction and I don't recomend it.
Daytona USA on Saturn, I know, 20 FPS and shorter draw distance, but Daytona CCE changes are mostly for the worse, the cars are not captivating and the gameplay is slower and have a tight steering.
