You see it in local restaurants (excluding chains) more in the Northeast, especially NY State, than elsewhere in the country. I don't mean buffalo wings, those are everywhere, but specifically buffalo chicken pizza and buffalo chicken subs (and BBQ chicken subs for that matter). Buffalo chicken sandwiches are more common in the NE at non-chains than elsewhere.

Buffalo chicken pizza: buffalo sauce base, chopped chicken tenders, mozz and cheddar, blue cheese crumbles (and maybe blue cheese dressing for dipping)
Buffalo chicken sub/sandwich: chicken tenders dipped in buffalo sauce, with lettuce and blue cheese dressing

Is a buffalo chicken another name for an ostrich?

Nah, actual chicken, from Buffalo.
Lost his job when the plant closed back in '87.
Picked up work for the cable company in the 90s. Worked up to regional dispatch lead before retiring.
Thought about moving to the big city, but it just wouldn't be home.
Hard working, blue collar sort of chicken.

BTW how do you guys compare the spiciest varieties from Buffalo Wild Wings to actual chickens from Buffalo? I was a bit disappointed that their spiciest options were just "very spicy", not "super spicy".

I donno, maybe I am desensitized.

Is this a real question? I've seen/eaten Buffalo everything in almost every state in the US I've been to. Maybe it's more prevalent in NY thanks to, well, Buffalo, but it's plenty popular elsewhere.

No, I've seen it down heard in Atlanta with Buffalo Chicken Tenders, Buffalo Pizza, Calzone, etc. Buffalo really has just become a catch-all for anything with chicken and hot sauce.

Personally, as person born and raised in Buffalo, NY I think it's disgusting to put chicken wing sauce on anything besides a chicken wing, if not heresy.

Buffalo Wild Wings is complete trash compared to any local pizza that sells wings in WNY, let alone Duffs.

I love buffalo chicken everything. Buffalo Wings & Rings restaurant has buffalo chicken nachos and I could eat them everyday. Also, their house made blue cheese dip is the best thing i've ever tasted!

nah, buffalo sauce. it's a thicker, slightly creamy hot sauce. delicious. has nothing to do with buffalo the animal. originates from the city of Buffalo NY

on the other hand, I had buffalo jerky once. I was thinking it was buffalo sauce flavored but it was jerky from buffalo the animal. I can't remember if I liked it

When I lived on the south coast of Massachusetts back in 2002, I did notice that buffalo chicken was everywhere. When I moved back to the south in like 2005, everything was buffalo chicken there too.

I guess I feel like the trend has been there for like a decade or more now

In TN it's always been here, but I've noticed "buffalo ___" adverts more often lately. It's almost like Sriracha is out of fashion and buffalo came back.

No, buffalo-style food is everywhere.

This.

I mean, come on OP. Even just take a look at Buffalo Wild Wings locations:

New York and New Jersey aren't special.

Here in the midwest, there's quite a bit of it. Most delis have some sort of Buffalo chicken sandwich, you can get a Buffalo chicken pizza at most places, and the deli counter at the grocery store always has sliced Buffalo chicken by the pound for sandwich meat. There are also Buffalo chicken chips, in both the big national brands and small regional brands. Sometimes restaurants will get cute and run a special on "Buffalo fish" or pork or whatever. And of course you can buy sauce at the store.

Personally, it's a flavor I associate with fall. Reminds me of football.

Here in New Jersey we buffalo chicken everything. Sandwiches, pizza, paninis, fries, strombolis, etc.

You too?

Nope, we have that even in San Diego, basically the farthest place from the northeast.

There's also the fact that I love buffalo everything as a general proposition, so I probably go out of my way to look for it more than most.

Um, it's just hot sauce with butter in it. The concept of there being "rules" about its use is ridiculous.

Thanks a lot OP, my salivary glands just went into overdrive just from thinking about eating some wins at fucking 10:00 a.m.

Outside specialist American diners, I haven't seen Buffalo anything on UK menus. KFC in the UK does provide a condiment called buffalo sauce, but doesn't seem to serve buffalo wings as a menu item, strangely.

Most British people seeing the word "buffalo" on a menu would be inclined to assume it was a reference to an ungulate, to be honest. The reputation of Buffalo as a centre of cuisine has not reached these shores.

I mean, the UK is literally across an entire ocean, so it isn't surprising.

Something tells me they fish tacos aren't ubiquitous there either.

I'm pretty sure the vast majority of chicken eaten in the city of Buffalo is not made drenched in hot sauce

As someone who lives 45 minutes from Buffalo, the entire city is actually covered in buttery pepper sauce. It flows in the streets. Sometimes if the winds are right, you can smell it from Rochester.

Wait, what's this talk about Buffalo sauce just being "hot sauce plus butter"? Is that true? I mean, it seems like Buffalo is a pretty distinct flavor. Like are y'all saying that if you mixed say, Tabasco with melted butter, it would taste just like Buffalo sauce?

Because if you have a bunch of different wings: BBQ, teriyaki, Buffalo, honey glaze, and so forth, Buffalo is just as distinct a flavor as the others. And it doesn't taste the same as just chicken with hot sauce. Are you saying that if I took that same chicken with hot sauce and dipped it in some sort of melter butter sauce, it would taste close to Buffalo? I'm skeptical. It seems like there are other flavors in Buffalo sauce that aren't covered by just butter and whatever hot sauce.

And actually, for that matter, different hot sauces taste different anyway... Tabasco and Frank's Red Hot and Cholula all taste different.

Okay, EDIT: Apparently, most recipes get a some garlic and Worcestershire added to the mix too, and more vinegar (beyond what's already in the hot sauce). But basically, existing hot sauce and butter are the big ingredients. Huh. I had no clue.

Also, upon researching this, I discovered that Tim Horton's just today unveiled a new Buffalo sauce latte. The regional president of Tim Horton's says it's "unexpectedly delicious", but conversely most people on social media seem to be saying that it's "fucking disgusting".

One of my favorite college meals was a place that served a baked potato with buffalo chicken on top and a side of ranch. Damn that sounds so good right now.

Wow, I'm not surprised that Ohio has the second most BW3's. I see them everywhere. I am surprised at just how many more there are in Ohio in relation to other states. In my suburb north of Cincinnati there are 3. Yep, three BW3's all within about 10 miles of each other. They all stay pretty busy too.

I want to trade BW3's in for a few Wing Stop's
