I don't super love the Mana games (with the exception of Legend), but Rabites are adorable lil mofos. I also adore the slimes from Dragon Quest. I guess they're both simple shapes that bounce, squish and stretch a lot. Makes for some visually pleasing animation.

Dragon Quest enemies in general, definitely. Like, they pull off so successfully this character being cute and intimidating:

Both these games have a whole package of adorable monsters. It's one of the big reasons I'm still planning on playing through the DQ games eventually

I like these raccoon Waddle Dee-like things from Mr.Gimmick. They don't even really attack, they just back off and avoid danger.
