Coconut butter stuffed dates...you're welcome.

Wanna eat something awesome and healthy?

I went through some incredibly difficult health issues predominantly digestive related in the past. And I have followed an AIP diet (autoimmune protocol) for a while. But as restrictive as it can be - despite having learned to love much of the food on the protocol - I always miss a good decadent dessert. I've always had a sweet tooth. But within the confines of the AIP diet, let alone within the boundaries of general healthy eating, it's really tough to find the right combination of sweet and fatty that replicates a really great dessert while still being a positive in terms of nutrition. But these...oh man. These are the truth.

I'm gonna stick with unhealthy shit. I don't have a digestive issue that would force me to convince myself that these are good.

Actually it looks interesting. Perhaps Peanut butter may also be good with this... or perhaps a bit of shredded coconut slices to enhance the coconut flavor? I may give it a chance. (My mother loves anything coconut and she's visiting me for couple weeks)

You don't have to convince yourself. They're genuinely great.

PB is great with dates. (although I prefer coconut and I've cut out all nuts/legumes for a while)

I love dates but I misread 'coconut butter' for 'cocoa butter'. So now I'm wondering if it would be a valid swap because cocoa butter (the edible kind, not the stuff preggos rub on their belly and tits) tastes good. :pie_thinking:

Just came back from groceries and tried with my mother - unfortunately the shop we went didn't have coconut butter, so we just tried with peanut butter. It was quite nice! The natural sweetness of the date was nicely complemented peanut butter's flavor. I will give a coconut butter a go when I find it elsewhere.

I can confirm that these are fantastic.

Since moving to the middle east I've really taken a liking to dates. You can get so many varieties out here (in terms of fillings), the rest of the world is sleeping on these wonders.

I don't like coconut, it just makes everything taste like coconut. Cocnut milk for example, as a substitute for cream. Have fun ruining your dish. The only exception is if you lightly sprinkle some flakes on pastries. It's a great oil for other stuff tho, like moisturizing. It's even anti-fungal.

I imagine that would be good. Probably tastes like a chocolate cookie.

I'd try it, but I'll probably never have coconut butter handy.

You can easily make your own. Just get some shredded, unsweetened coconut and blend until pureed. If necessary add a very small amount of melted coconut oil if it's not turning into a butter as fast as you'd like.

They really are natures candy. And legit good for you as well. I know some people don't like coconut (why?!?), but they can be filled with lots of tasty things. One excellent way to make them is to wrap them in bacon and fry them. I haven't eaten bacon in a long time, but that combination is a real treat!

Now I'm imagining bacon wrapped and coconut butter stuffed dates.
