Please reccomend samurai anime (and movies!)

I loved Samurai Champloo over a year ago, and since then I've searching for similar shows, without luck. (sans hip hop, I'm sure..... aside from Afro Samurai, of course, which was actually pretty good if short)

I was burned badly on Ninja Scroll TV recently. The original movie was pretty good, but the new series is just junk food for kids.

I want something with well directed fights, and rich philosophy... like a real samurai flick, or even a spaghetti western. Is there anything else like this in anime?

Also I don't really know my samurai flicks all that well, if someone would enlighten me with a favorite or two...
 
Tasogare Seibei! (the twilight samurai) It's a great Japanese movie, fairly recent, and extremely well acted. There isn't a whole lot of fighting (the movie is very different from other samurai movies) but what fights there are, are definitely well done. The ending kinda sucks, but the rest of the movie more than makes up for it. Here's the Wikipedia page.

And Spagetti Westerns? Yojimbo and Sanjuro.
 
The Kenshin OVAs (Samurai X in the US, I think) really eclipse everything else I've seen in that category. They're really nothing like the tv show. No humor, incredibly brutal and realistic (or at least the ones that deal with his past. I haven't seen the ones about the future).

I saw a trailer for Samurai X and it looked good. Different than the TV show for sure.
 
The Kyoto arc in the Kenshin Tv Series is awesome ...I heard good things about SAmurai 7 and Gunsx swords too but i have not seen them.

I saw a bit of Samurai 7, but it was really more of a fantasy adventure version of the Kurosawa story.... it didn't really feel like a samurai show to me, but it might be good for other reasons.
