Disclaimer: I used the ingredient listed on the pancake mix box times 2. You don't want to fill up the rice cooker too much, cause the cake expand. about 1/3 of the rice cooker full of batter should be good.
I used Aunt Jemima pancake mix.
2 cup of pancake mix
1 and half cup of milk. (i used 2%)
2 teaspoon of oil (i used olive oil)
*I might add a teaspoon of butter tomorrow to see if I can make it more moist* though it was pretty soft and moist on its own.
mixed it all evenly, pour it in the inner rice cooker bowl. and i just set it to normal cooking for about an hour. (thought next time I might try the "quick cook" to see if I can cut down on the time.
Use a toothpick to check and see if the cake is done, if the inside is still sticking, its probably not done. give it another 10 mins and check again.
flip it upside down and enjoy!
Even if she told you it would probably not be as good. Moms have some sort of super ability to make anything absolutely delicious.

at least it doesn't look completely horrible like the ones in the other thread. still way too much pancake to syrup ratio.
I hate the taste of pancakes thicker than a couple of mm, so I bet that 'pancake' in the OP would be like the 7th layer of hell for me.
I cut the cake about a third of an inch think. though I might cut it even thinner tomorrow. Beside most people tend to put much more syrup than normal. It kinda even it out for me, given how thick it is.
