Every RPG should give you the option to kill every character save for a handful of extremely important story characters.

Fallout NV did pretty well I think. Kill someone and fail a quest. Good trade. I killed the leader of the slaver clan (whatever they were called) and failed a load of quests. Was worth it though.

You guys don't know how scared I was when I pissed off the merchant in Dark Souls. I wasn't familiar with the controls, so I was pressing random buttons to get the item inventory screen (or navigate within it, I don't remember exactly). Suddenly my character swings a sword towards the guy and the guy got pissed. He started chasing me and I friggin ran for my life lol. I never knew I can kill those people.

It's hard to kill merchant, but it is possible.

Usually though it a lot more fun to try steal from them, by using a pet or other tricks...

There should be a game where the merchant is the final boss.

Like the twist at the end is that the entire conflict was instigated by the merchant just so both sides would buy his weapons.

Resonance of Fate has something vaguely similar -

not a merchant, but an old dude who gives you advice along the way. For some inexplicable reason, you end up not just fighting him, but actually killing him. There's even a trophy for it.

Stealing is a pretty decent strategy though as it lets you get those expensive essential items much quicker.

IIRC He would dissapear of that zone forever, but he would appear in other zones.
His a misterious figure so that made the character even better.

All flagged ones can technically be killed by the other faction. It's actually encouraged in the case of the PVP gear merchants who are typically high-level elite guys. And typically surrounded by bored guys with great PVP gear.
