An ode to 'Negerkusstorte' (delicious cake recipe inside)

When I was 5 or 6 years old, I was invited to a birthday party of a girl in my class. It was there when I realized I tasted heaven. They had some sort of cake I have never seen or tasted before and it was so utterly delicious that I, being nothing but a little brat, asked the mother for the recipe. Since that fated day, my mother makes me one for every birthday, even to this day. It's so incredibly tasty and easy to make, that I have to share it with the rest of the world. I kept the secret alone to myself long enough, so I'm here to proudly present to you the 'Negerkusstorte'!

A 'Negerkuss' (german for: negro's kiss) [nowaydays also called 'Schokokuss' (german for: choclate kiss) to be more political correct] is a popular sweets in many countries in Europe. The origin isn't clear, but sources point to Denmark as the inventor nation. In English speaking countries it's apparently known as Chocolate-coated marshmallow treat or 'marshmallow teacake', and while I find it doesn't taste like mashmallows much, it does have the same consistency as 'marshmallow fluff'.

In Germany, every year approximately 1 billion are sold. This makes an average of about one dozen per person per year. They are available in supermarkets, many bakeries and some schools.These sweets are made of sweetened egg white foam and not marshmallows. The consistency is quite fluffy and not sticky or gooey.


They come in many variations too:

If you ever want to taste the holiness on earth yourself, here is the (family) recipe. Takes only approximately 20 minutes to make tops:

Ingredients
*15 normal sized Schokoküsse (about 1 1/2 packages; for small ones, up to 3 times the amount)
*500g Quark [Curd] (40% fat; Low fat for a less sweet taste is fine too; I prefer it).
*250g Whipping Cream
*Half a lemon
*1 to 3+ stories of Cake base.

-Take a big bowl and decapitate the 15 Schokoküsse (remove the waffles) and put them into the bowl.
-Add 500g of Quark
-Add one table spoon of lemon juice
-Mix it until the Schokokuss-heads are crushed and everything becomes a fine cream with choclate chunks.
-Whip the Whipping Cream in another bowl until it becomes stiff and fold it gently with the other ingredients.
-Take a cake base (or make one yourself) and put the mixed cream on it. Add another cake base and add another layer of mixed cream. Repeat as often as you like, I prefer it to be a 2 story cake, since it has the best dough to cream ratio (base, cream, layer, cream) and surround the edges with mixed cream as well.
-Add sprinkles, smarties, chocolate chunks and/or the separated waffles to decorate the cake to your liking (I prefer jst sprinkles). Other variants are possible too of course!
-Put the cake into the fridge, freezer or outside during winter for a few hours to let it harden for an optimal experience.
-Eat and enjoy.


I will make one tomorrow, hence the thread. It's not a widely known recipe - not even in Germany, so I hope someone will take the opportunity and make one himself and report back; you won't regret it. :)
 
Sounds good, OP. I think I may have tried that smaller thing in the picture, and I do recall it being very good.

But what is a Schokokuss and can I find it in an American grocery?
 
I've never heard of Quark before. Would Cottage Cheese be a decent substitute?
I linked to the wikipedia site in the indigents list. I heard curd', 'cream cheese', 'card cheese' is what it's called in the US, but I'm not sure. It doesn't really tastes like cheese, more like a thick natural yogurt.
I don't know how you guys can live without it. It has by far the most proteins and lowest fat (low fat version of course) of any product I know of. 500g has like 60 to 70g protein and only 300 calories.

That's just what it was (and still is commonly) called. It's from the 18th and early 19th century. The 'official' name they use in commercials is now 'Schokokuss' (choclate kiss), but I don't hear that often. The term 'Neger' is very outdated and not used anymore. It also never had the same stigma attached to it like the english equivalent.

Yes, they are awesome, in particular if you eat them with a spoon after you microwave them a bit. They get RIDICULOUSLY huge and the chocolate melts.

Ah, no worries, and I'm in Canada. Was just curious if that was available to buy in NA. I'll look it up myself tomorrow and see if I can buy it at a local supermarket.

This is the most wide known version of them (in Germany at least).


Important: Get the big ones, not the smaller brothers (which are not even remotely in the same league). Sadly, it seems that the little ones are the only one you can buy on amazon.com.

Anyway, to jump off of that filler garbage, learning about other cultures and what's going on in their kitchen has always interested me. I bet the lemon really gives it a fresh pop.

Yeah, the combination of the sweet schokoküsse and whipped cream and the more natural sour taste of the low fat quark / curd and lemon juice makes for an amazing taste. Just the right amount of 'sweetness'. Of course you can alter the recipe to your liking. E.g. the original recipe was a lot sweeter (and had way more calories); 500g cream, 250g 40% fat quark and 9 to 12 schokoküsse as well as 3 layers instead of 2. Also vanilla sugar for some reason.

They look pretty tasty. How does the marshmallow compare to other sweet goods marshmallows? I've never been a big fan of the stuff outside of just straight eating them and always thought marshmallows in stuff like moon pies other other treats tasted a bit off.

Apparently the German ones aren't made with/like marshmallows, so they don't taste the same. (Sweetness is around the same level if you just eat the filling). They kinda have the same consistency as marshmallow fluff, but are a bit more fluffy than the filling of moon pies.

I don't know about this cake OP mentions. I've never heard it, but it's time for a confession about a conspiracy regarding pastry, that Denmark has patented for more than 200 years.




You see, in the mid-1800s, at one point, all the bakers went on strike, but the Austrian bakers were not affected by the strike, and they kept making pastries with what they had at their disposal. So they made the Danish, pastry.
In Denmark we call Wienerbrød (Vienna Bread) but the whole world think it's a danish invention. It's all a sham. One of our biggest contributions is not even our own. And it's one of the few really local things that are worth eating in Denmark.



I'm afraid that one day we will find out that Grand Danes are not really danish dogs..:(
