As much as I hate Sunshine as a whole, I have to second Champions road. It is impossible.
I remember the ferris wheel part in Mario Sunshine being pretty awful. It's like the camera was actively trying to kill you there.
Maybe I'm weird but I found the manta ray surfing to be fun.Stingwray surfing in galaxy. Horrible motion control implementation.
Sunshine and the pachinko level, nothing else comes close, the controls themselves simply don't work like they seem they should.
