These sorts of topics always boil down to people saying "I want this anime again but more faithful to the manga this time." So boring! You already have the manga; just go read that if that's what you want! I'm all for imaginative reinventions or fresh perspectives on old material - something like Yamato 2199 is perhaps the ideal kind of remake - but a lot of anime fans are distinctly lacking in imagination. Especially since the examples of new anime adaptations people point to in this context - Fullmetal Alchemist Brotherhood and Hunter X Hunter 2011 - are actually worse than the previous anime adaptations of the same series. So I think this is a bad question to begin with.

i say jojo's bizarre adventure. i wasn't happy with the remake and liked the action of the 90's original OVA's. (not the prequels)
i would like a do over with the 90's art style/animation.

First arc was significantly altered in the anime, too. Definitely deserves another shot.The obvious answer here is Ruroni Kenshin. Series was canceled due to shitty filler arcs before it could get a chance to return to the source material. Any series that ended like that deserves a second chance.
