Apple can't change them really dramatically at this point. They are so ingrained into pop culture and social awareness.
When people think emoji they think of the Apple version of them. It's the only one you ever see in media for the most part.

This kind of seems like an "If it ain't broke, don't fix it" scenario. Adding meaningful stuff like additional skin tones makes sense, but why are people being paid to continually redesign ghost and fruit icons?
Yep. "grinning face with smiling eyes" that got misused as "oh god why" because it was so badly done.
