I was certain that noone would mention the game I want to talk about because it sadly came and went without knowing much success, but Divinity 2: Director's Cut is a good RPG with tons of content and it has some truly great humorous writing. It's made by Larian, of Divinity: Original Sin fame and I would recommend it to anyone looking for a well-written and funny RPG.

The Stick of Truth was is one of the funniest things I have ever played/seen/heard.

On the opposite end of the spectrum is Sunset Overdrive, tries so hard to be funny but ended up being painfully unfunny. Great game tho.

Broken Sword 1 and 2 are the funniest games I've ever played, even though they were advertised as thrillers with a dark tone. George Stobbart was an absolute goldmine of hilarious one-liners and observations.

...also Paper Mario (both original and TTYD), Mario & Luigi: Superstar Saga
...and the classic LucasArts adventure games.
Some bits of Red Alert 3 were surprisingly funny, as well.
