Dog they probably aren't layering the cheese, cheese is the start of the line and then the pizza is passed along. Also it's weighed out. Pretty sure double cheese is 8 oz and extra is 6.

So if "extra" cheese is 14oz, shouldn't "extra, extra, extra" cheese be 26oz?
