First time I've heard them called a "steakhouse". Usually it's Brazilian grill or bbq.
Fogo de Chao in Philly was amazing for this. Pricey, but it's fucking yummy.

Usually here in Brazil you can tell the waiter how well done you want your meat and they bring it to you.
Also, not all cuts are lean (again, in here) but I find meat from other countries to be too fat, maybe there's that.

It's a unique experience. It gets old over time. I got one next to my work and haven't been in years, but that first time is magical.

Yup you can specify doneness.Places i have been to in the US let me have a choice. Ive asked for med rare and they have brought it to me that way. And I have asked for extra char and they have done it. And they have a range of lean to fatty cuts. Guess i have been lucky.

Taken advantage of this multiple times when I lived in Orlando. Except it generally lasted for a month.Went to Chima in Philly, It's proof that God loves us and wants us to be happy. I can't overstate just how awesome it is.

The best steaks I have ever had have been cooked by me in my home.
You have absolutely control over the meat and process. I like my meat fatty, charred on the outside but red an bloody inside.
None of that lean filet mignon trash.

I love Gyu-Kaku. They're a chain, but it's all good. Pricey unless at happy hour like someone said, though.

It's usually like 50+ a person. Expensive, but you really do load up.
I'm the same, it sucks because I wish I could go to one of these and pig out bit it isn't worth it.See that would be a waste for me. I can barely eat a 1lb ribeye in a sitting. I never eat anywhere close to whatever the entry cost is at a buffet.

Brazillian BBQ is damn good, but I thnk Korean BBQ beats it hands down. You get an even greater variety of meats, the grill in on the table so the meat is in your mouth seconds after it is done cooking and the sides.. oh all the side dishes.
