Not all, but they work with most. The back of the box tells you which controllers are supported. If you tell us which games you're buying, we'll be able to help.
But of course if the game has local co-op then it's obviously going to make use of either Wii remotes or Wii U pro controllers. You don't need two gamepads if that's what you're asking.
Some games do and don't, really depends on the game. You should look on the back of the box. I can tell you first hand that Mario Bros. U and 3D World works with Wiimote via co-op. The Wii Pad, sadly, on Mario Bros. U acts as a helping hand to help characters on screen.
Not all, but most are supported by them. All local coop games basically has Pro compatibility due to Wii U supporting only 1 gamepad at a time. And as for Wiimote I think it also supports all motion-controlled games and many Wii U coop games too, but you got to check for compatibility first as it's per game basis.

However if OP's question is about local multi then of course the game will support Pro controllers/classic/wiimote for that since there's no games supporting two Wii U gamepads.

Perhaps he/she is referring to the fact that the gamepad can only be used in single-player and the special boost coop mode (as player 2, 3, 4 or 5). To play 2-player regular co-op, you'd need two controllers in addition to the gamepad.
