Maybe not my favorite, but Sakura's Street Fighter IV theme came to mind. It's great.

On a related note, I really disliked how Mortal Kombat X doesn't have character themes. The music in that series is so unmemorable, and character themes are some of the things I love the most in fighting games.

I'm more of an anime fighter guy, but Street Fighter has some great themes, even if they're a bit traditional in some places. Personally I think the older games had better themes than IV with some remixes being a bit sketchy.

There's tons of great themes in Soul Calibur IV and V, too like Siegfried's Till Fate Writes My Epitaph, which has a badass name and a great sound to it.
