The previous mainline FFs are amazing games and you should definitely play them at some point but no, you don't need any previous FF knowledge to play XV.

Each new mainline entry has its own story, characters, mechanics etc. and isn't connected to other entries in the series.

No sir!

With the exception of any numbered sequels or the Ivalice games (FF Tactics / FFXII), every FF game essentially takes place in its own, separate universe.

Nope, they're all completely independent games with some shared, superficial tropes and recurring names/items/musical themes/etc. FFXV is the perfect game for you.
