If you want a full backup minus copy protected saves, you'll need to use the Backup Utility. If you want a complete transfer you'll need to use the Transfer Utility.
*I say hassle because people have had issues with both the Backup & Transfer Utility because some file is being a stubborn dick. Copying them to a mem stick should sidestep that issue and you should have no problems restoring them back.
For PSN, you need to login and go to PSN -> Account Management -> System Activation -> Game / Video -> Deactivate. Video is separate from Game and you'll need to deactivate it if you've ever downloaded anything from the Video Store. Then wipe the harddrive if you want to delete your files and then create a new user XMB account and delete your original one (the "Restore PS3 System" option under System Settings does the both things for you iirc).
