I like my bacon with some chew to it, maybe slightly less chew on a sandwich so I don't rip the whole thing to bits with one bite.

I never thought I would disagree with you.
People in here seem to be mistaking crunchy for crispy. No one is advocating eating Bacon straight out of the package. We just don't want it to fall to pieces in our mouths with that disgusting char taste. There should definitely still be some residual fattiness in some parts of your Bacon when it is done cooking, but the majority should be crispy (just not to the point of flaking apart when you bite into it.

I don't really care for rubbery slabs of bacon that slip out of your burger or blt when you take a bite. That crunch provides great texture to the sandwich as well.
