How do you order your Vietnamese food?

There are some really strict Sushi Chefs in LA.

And Siddx, Bun Bo Hue is god-tier. I had never seen it in SoCal, but a date in Saigon made me try it. Life-changingly good. Can't wait to go back for a visit.

I don't get the big deal. They are paying customers so they should be able to order it as they want.



In Japan it's a great insult to use soy sauce on your food. They value food and freshness and they devote their lives training in the art of cooking. If you see soy sauce on the table of a sushi restaurant it's crap sushi.

Ten minutes from my apartment is a Banh Mi shop run by this tiny, super old Vietnamese lady and she makes the best Pho and sandwiches.

Banh Mis have really risen in price ever since white people became privy. I used to see sandwiches for no more than 3.50 to 4.00, but no they're jack up to over 5.00 to capitalize on the lunch crowd. It's no longer a value king sandwich.

So good. Cơm tấm with grilled pork, shredded pork, fried egg, pickled carrot, etc. There are many variations of this dish.

Depending on where I go in LA I can get it for like $3.99. Usually the smaller hole in the wall places are cheaper and taste better.

That's the problem. I had no idea what it was when I lived in SoCal. Had to go to Saigon and a girl I dated showed me the way. Now I know and I'm a better man for it.

I had a bahn mi on the streets of Saigon that blows away anything Lee's Sandwiches could make. God-tier.

Incresingly jealous of Chengdu-GAF (which, interestingly, seems to be growing of late). Hangzhou has been good to me, but you get mapo doufu here and it's just sweet and salty.

Chengdu-GAF can eat a dick. Chongqing-GAF is where it's at! The hot pot...it literally doesn't get any better than this. Add to that all of the different noodle dishes that I can pronounce but can't write, along with the 炸酱酸辣粉 (which I'm not sure is a Chongqing-native meal or not). Some of my favorite food in the world is here in this city. I'm leaving on Tuesday, though, for Tokyo.

In America you should be allowed to order whatever you want. In Japan they study for years and they have more discerning palates. It's a true craft. If you have ever eaten good sushi in America you can see the influence.

This has to be the most ridiculous post I've ever read. Did you know that American chefs study for years? In fact, chefs of all nations/ethinicities perfect their craft over years of study, experimentation and creation of their dishes. This is Japanophile nonsense taken to the highest degree, man. You really drank the Kool-Aid.

That's what I order 90% of the time. The other 10% is Bun Bo Hue or Bun Rieu.

But I try to do it as white as possible.
 
All very true and I was gonna say much the same thing. But I get where the sentiment comes from. I know way too many so called foodies around town who wouldn't be caught dead eatting Chinese take out because it isn't authentic, and get pretty condescending about tacos and what is and isn't "real Mexican".

But then the same hypocrites see a food truck serving korean barbecue burritos and they are all over it.

While I agree with you, something really turns my stomach about flour tortillas. :P

She bakes her own bread and sells you a foot long sandwich for 5.50. Reasonable price.

Pho sucks, there are way better soups here in vietnam. Bun Bo Hue, Bun Mam, Hu Tieu,a and especially Cao Lau all make Pho look like the boring nonsense it is.

Banh Trang Trung (rice cracker pancakes) Banh Xeo (like a crepe) Com suon nuong (bbq pork cutlet) are probably the best food items in general, although it strongly depends on who makes them. Vietnamese food is really easy to mess up.

If you're in Vietnam then Pho sucks there. Straight up. Still, a good cook makes Pho taste and smell better than any other Vietnamese soup dish. I'm pulling out my Vietnamese card out on this.
 
Any time I go to a Mexican restaurant with friends, it's inevitable that someone will order "nachos with just chicken and cheese."

I've seen much worse than this. Why I always eat before I arrive at certain dinners and BBQ's some people are just used to plain tasteless food.

I thought the pho I had in Saigon was pretty good, and it was pretty cheap. It was as good as some of the real-ass Viet places I went to in San Bernardino and better than some of the bullshit "fancy" Viet places I went to in LA.

That's true, the problem as I see it here in Saigon is that it's very hard to get fresh ingredients because they have to be shipped in and are often stored poorly. So you end up with stuff that has been sitting around exposed to motorbike fumes all day. They also use very little quality meat in their pho so you up with mostly bone and throwaway meats. Pho used to be my 5am walking home from the backpackers district still drunk food. Once I started eating it sober I realized it just isn't very good.

There has also been a lot of problems coming to light recently with food suppliers being exposed for pumping dangerous chemicals into their foods to either make them appear fresh for longer or increase the weight to make more money. Borax in noodles is a popular one.

What you've described sounds like a complete fucking nightmare. You're doing it all wrong. Though I've been told it is ok to eat large sushi rolls with the hands. Don't know if that is true.
 
I'm probably just used to it since I had a lot of Viet friends back in the day but pho doesn't seem all that exotic to me. Now duck's blood on the other hand...

I'm on my third year living in Japan and never even noticed that some sushi places don't have soy sauce. I really only use the soy sauce dip if I'm having gyoza or the delicious sauce in yakiniku settings.

As for choppers, ditch em. Seriously, just use your hands to eat the sushi. Using your hands isn't common but it is accepted.

If it's just a regular sushi place then I'll eat it however I want. If it is a sophisticated place I eat how it is presented. Basically I'd they don't have soy available on the table then you're not meant to ask for it.


With that said, soy sauce is rarely used as a condiment in China as well. I love the stuff so even when I'm in Shanghai or Chengdu I ask for some on the side. Severs usually find it funny and I have to explain how it's a USA thing.

Yeah I know this is exaggerated for effect but don't think it fits in any way. I have never seen people order Vietnamese/Asian food with so many extra wishes.
And even if, people do it with every kind of food, not just ethnic. My family sells burgers and fries and people ask for so many stuff.

Thought this was just about the pronunciation and I can get behind the "healthy hipster" talk.
BTW, wouldn't Goi Cuon be summer rolls or at fresh spring rolls?

Bun Bo Hue, Mi Quang, Cao Lau and Banh Canh I had weren't good.
 
People do this all the time to Hawaiians. When they find out you're Hawaiian they go on and on about how they "love Hawaiian food" but then when we go out to eat they're like "Spam? Are you kidding?" or they turn their nose up at poi and then they just eat their racist hamburgers with a pineapple ring on top.

Are they hawaiians or locals though?

But speaking of the whole americanizing food thing, that thing also happens here in Sweden.
My mom grew up in the northern parts but studied for a while in Jönköping, which is where i live now. Anyway, this place is pretty filled with Pizza-places and stuff, serving all from Kebab to cevapi and stuff like that. And since i'm half bosnian i've grown up with stuff like Cevapi and shit, so i guess i know how "proper" Cevapi (and kebab) is supposed to be you know? Anyway, my mom told me a goddamn horror story. After she finished studying here and returned to Luleå, far up the north. And apparently a Kebab/pizza place had opened there. Kebab and pizza are pretty much always served in the same place here, we dont really do the whole italian pizza thing.
Bu back to the subject: Having eaten alot of that in Jönköping she was like "shit yeah!" and was hyping like crazy all the way to the place. And then when she got there she told me how terrible it was. Apparently it was some redneck dude who knew jack shit about what kebab even was, serving cheap kebab pieces you buy at the foodstore with crappy pizzabread, AND THE SAUCE WAS FUCKING.... FUCKING BEARNAISE!

FUCKING DISGUSTING. WHYYYYYY
 
With that said, soy sauce is rarely used as a condiment in China as well. I love the stuff so even when I'm in Shanghai or Chengdu I ask for some on the side. Severs usually find it funny and I have to explain how it's a USA thing.

I was weirded out by this at the beginning (I'm in Chongqing, but went to Chengdu for business). They don't even default to giving you some water to drink or giving you rice, most of the time. The dumplings are good on their own, though. Really, you just have to let it go - no need for the extra sauce!

Now, in Thailand, things are different. I need that fish sauce with chili peppers! One of the best things ever.

Yeah, the freshness of the ingredients and the quality is the main issue with Pho in Saigon. Good quality bones, meat, and all of that are hard to come by in the country and they make all the difference in regards to how good it is. The other tissues don't suffer as much because their soups are usually spiced better and use easier to get ingredients. Bun Rieu, for example, uses a tomato broth with shrimp or crab paste, both easier to obtain in Vietnam than good quality beef and chicken.

My mom's complained of the food back in Vietnam on numerous occasions after she's returned home from visiting family there, lol.

I usually think restaurant pho is not great but in Saigon, a Pho 99 might be pretty solid compared to the random shops selling there.

I really need to practice my mom's pho recipe more. I wish I could give everyone a bowl of it if they say they like pho restaurants, lol.
