I don't get the appeal of cream

I accidentally took a sip of my wife's coffee the other day and nearly did a spit-take there was so much cream and sugar.

Black as midnight on a moonless night for me.

Contrary to what common belief, fat is good for you. Cream in particular is sweet and fluffy, so most people like it. It's dairy so maybe not the best for others who are lactose intolerant. I would say that your opinion is not common

I can understand in other contexts though.
 
Whipped cream is for desserts basically.

Heavy cream adds nice richness to soups and sauces. You can reduce it nicely and it won't break, unlike milk. It's excellent for pan sauces.
 
The more I learn about cooking, the more I realize that a lot of things taste good because it either has sugar, salt, or fat added into it. Usually some combination of the above.

A lot of foods have cream added to it to make it taste better, and to give it a smoother texture. Deep fried foods taste good because of the fat.

Try making mashed potatoes without butter, milk or cream added to it, and you'll immediately notice something missing.
 
It is fat, fat is used as a flavor enhancer because human palettes are calibrated to it. Cream is just a type of fat that comes from dairy and thus exhibits those flavors. You can try full-fat coconut milk instead if you like a different flavor profile.
 
It is essential in many culinary styles. That mac and cheese you had at that place by the corner probably had loads of heavy cream involved.

Texture is an important part of the appeal of food. The light and fluffy texture is satisfying.
