What makes a good quest ? Main, side, and in between ?

I heard from a lot of folks recently that the quests in BG3 are amazing, yet to be plain and simple a lot of them are also subject to watching characters speak standing around like in Starfield and Final Fantasy 16. Yet 16 gets shit in for “mmo fetch quests” and “characters just standing around talking to each other.”

What makes a quest interesting/engaging? What is a bad one ? What games do a good job of this or a poor job ?

I personally am always a fan of “hidden” quests like in old JRPGs. No marker and just stumbling on missable content like hidden dungeons. Example final fantasy 6 and being swallowed by a sand worm.

In recent memory I really dug the quests for Cyberpunk 2077.

Edit: Shit can mods change title to be quests not questd.
