I didn't want to go too specific but yes, of course you are right.Dude i think that vrr and gsync are not the same thing.
Vrr is an hdmi 2.1 new feature, g-sync is made by nvidia and it is much older, they probably work in the same way but they are 2 different things and the tv has both of them (and freesync for amd gpus on pc).
I think the tv use vrr with the consoles and gsync or freesync on pc unless you specifically disable these 2.
returning to your post, so i can basically chose any video mode like filmmaker then use the game bar sub menu that you can pop up with the remote and activate the low latency ON (i just saw a video where they show this).
vrr is variable refresh rate. Hdmi 2.1 standard vrr is freesync. Just technicalities.
On pc You just will use g-sync. On consoles, the other one
