Also McConaughey gets a free pass for doing that "move your hips and hook" move on camera in Magic Mike. He may have been in a bunch of romantic comedies but some of the other films I've seen of him show he does have some range outside of that typecast.

Yep. Scorsese organised to shoot his earlier scenes first, then the production took a break for nine (?) months while De Niro ate like a fucking pig, before they then shot the rest of the film.

Obviously, but look at McConaughey's pecs. They're still pretty solid, despite the fat and muscle he's lost.

In this case I'd say he's lost more fat than muscle in the abs. While it's true there's no spot-fat-removal you can definitely lose fat in some parts of your body more than others. Legs, for example, constitute more than half of the human body's muscle while your stomach can account for the majority of fat.
I'm not trying to imply it's not impressive though. I couldn't do it, as my body requires a daily intake of brownies.
This still blows my mind how quickly he can cycle through these sorts of massive changes.
