When you stare at the inverse colored image, the photo-receptors for those particular colors become overworked from their activation. When you switch to the grayscale image (remember that grey is just all colors being equally present to varying degrees), the colors that you just wore yourself out on don't show up and you're left with seeing everything but the negative colors (which is the positive colored image).
