As for chick flicks, I can't stand most of them, but The Princess Bride and My Big Fat Greek Wedding are easy to watch over and over again.

Aside from Shaun of the Dead I've seen only films that don't fit your criteria in this thread.
Go with something like Dances with Wolves.
Stuff like Goodfellas and Hot Fuzz are considered boring by people I've shown movies to who aren't that interested in movies.

An incredibly charming, witty, gorgeous movie. I'd never heard of the movie when I first watched it and didn't even know it was Woody Allen (definitely his best movie in a long time), but it's one of my favorite movies of the past few years.
I really like Midnight in Paris, but it took me 3 tries to finish it. Not sure if it's just me.

Hot Fuzz is a strange recommendation for this thread, since so much of it's humor depends on references to other action movies, some of which are really obscure.
Django Unchained. When I first got it, I only intended to rewatch a few scenes, ended up watching the entire movie. I manage to resist better afterwards when seeing single scenes, but it's still tempting to just see the whole thing. I don't even like Django that much, but it's strangely addicting to watch.

It's one that you can easily get into with its simple themes and grand story.
Stuff like Goodfellas seems like it has long running inside jokes. Most of the humor is lost. The Fifth Element? I wouldn't recommend that to anyone who isn't into Sci-Fi.
Length doesn't really matter.
Midnight in Paris hard to sit through? It's not exactly challenging, or slow. This is the first I've ever heard of someone feeling that way about the movie.
Someone else mentioned 'In Bruges'. That's another of my favorite movies from the past five or so years, but I wouldn't suggest it as a movie that's super easy to sit through.

Save yourself the trouble and time, and get a netflix streaming subscription. Half the fun is narrowing down a selection with a group of people, and chicks don't give a fuck about blu ray anyways.

Pretty much any of the good Will Ferrell comedies (Old School, Anchorman, Talladega Nights, Stepbrothers)
Otherwise I'd definitely say movies like Avengers, The Dark Knight trilogy, Stars Wars (original trilogy), any good James Bond movie, and the Harry Potter series are great.

Really? I've liked pretty much everything Woody Allen has done and I couldn't even finish that one.
I had my sister's copy of the Blu-ray for months and finally just gave up.
If it's on tv, I just stop what I'm doing and watch.

It's not a comedy, but I feel like Gladiator is popcorn movie perfected. Fun, classic actions sequences. (Stock) characters provide just enough characterization and plotting to not feel like an insult. Joaquin Phoenix is actually pretty amazing.

If you want comedies that are easy to watch, this is the one. The story arc is brilliant, but each individual scene is worth watching isolation.
Every Sofia Coppola film looks great, and they're all just extended music videos anyways. Later Kurosawa films look amazing. Pretty much any decent production value animated film pre-1990 (Any Studio Ghibli), a lot of Criterion films... A lot of black and white (35 mm) films look stunning, Wes Anderson films...
Just in terms of showing off the tech, y'know... If you're a film buff you should own most of what I suggested, otherwise anyone who loses interest within 20 min. of a film shouldn't be bothered with anyways.
edit: Well, it seems the movies I listed are certainly easy to watch (ie: beautiful to look at), easy to pay attention to on the other hand...

edit: but now that you mention it, in terms of visual prowess, EVERY Kubrick film looks amazing on BR.
agreed for sure, but particularly the bold one. will ferrell moves are always easy to watch. also wedding crashers
