Currently, the overlay on Mac OS X is a little user un-friendly. Programs you want to load with the overlay enabled have to be bootstrapped by a launcher executable, like so:
/Applications/Mumble.app/Contents/MacOS/Overlay/mumble-overlay /path/to/Game.app

Vent also has far less than a second delay for me. I have a ping of 20 to my server.

Ventrilo delay is roughly 2 to 4 seconds, Teamspeak is around 2 to 3, and in-game chat delays are usually around 3 to 6 seconds.

Can't speak for game servers, but their Mumble servers are shit. Luckily I found a service that is actually good and about the same price. The sound quality is even better, which is nice.
