I'll join...
NeoGAF username: Gemüsestäbchen (never forget those ulmauts)
Country of residence: Germany
2 countries you would like to swap with: Japan, or USA.
Things you like: Jelly / gummy sweets, hard candy, crisps are appreciated if we can deviate a little
(And are great packing material)
Things you dislike, cannot have or allergic to: Hate liquorice / aniseed sweets, choc is okay (but summer heat is not!), no Haribo brand (I live in the land that is HQ of Haribo!)
... but I have to say the person I swapped with last year wasn't exactly on the same wavelength as me - I spent €40 massive box of goodies as agreed before postage and he sent literally 6 bars of sweets that were from some "specialist" who clearly ripped him off...
He did say that maybe he should've just gone to Wal-mart - so I can't really be cross (so not naming anyone), but wasn't what I expected at all - but still up for a swap - sugar is our fuel at work - so I'd be looking for someone who actually wants to send lots of local stuff...
Yep, this is the issue I had. All these brands are all over the world and not special... However less "known brands" stuff like Swedish Fish are pretty cool for people in EU... I would gladly have entire box of those
Hard to tell really, but if in doubt I think it's okay to ask when people get partnered up.

A lot of American candy is everywhere - M&Ms, Hersheys, Snickers, Mars, Raisenettes, Milk Duds, OREO cookies etc.
On top of that I come to the US a bunch of times a year and buy candy to take back, so for me personally I'd prefer not to have a US partner unless they could manage exclusively boutique or very local stuff.
