Even Wolverine's Revenge followed that formula, but the only game thats a true God of War clone today is Dantes Inferno.
All of the games you mentioned have their own tempo to the action, though, along with other unmentioned games like Devil May Cry and Onimusha. If you were to say that Shinobi and Ninja Gaiden are similar games, then I'd have to light you on fire and roll you down a hill, because they are completely different in all but the most superficial ways. People right now are calling "God of War" on Castlevania for a few reasons, I think:
1) Thematically there is unfortunately a lot in common for Castlevania and God of War. They both involve battling huge mythical creatures in an ancient environment. Rygar also shared this element, albeit in a slightly less conventional way (who hasn't wanted to kick Aristotle's ass in his true one-wingel angel form? Take that, virtue theory!).
2) Gabriel is sporting Kratos' weapon. It's not a whip, like in Lament of Innocence. It's an extendo-chain-thing with a variable range depending on what the combo requires. Worth noting this is a much more player-friendly road to take with a chain-based weapon than what LoI attempted by fixing the range. Rygar also has a somewhat similar weapon, though his weapon is a bit more of a multi-tool.
3) Gabriel moves like Kratos. The way he rolls, the way he runs, the way he swings his weapon, the way he moves along balance beams. All very, very similar to Kratos' animations, and unlike any of the other 3d action heroes, save Dante (from Inferno, not the cool one).
4) The tempo of the combat, the way it unfolds, is very much in the style of God of War, which is different from every other major 3D action game. Devil May Cry is based on pure offence and juggling multiple enemies at once while maintaining a single combo. Ninja Gaiden is a very, very, very defence-focused game, as is Rygar. Shinobi is about chaining enemies together because if you don't keep killing you will die from Draindeath. The flow of God of War is evade, combo, evade, combo. The only other 3d action games with combat like God of War's are Dante's Inferno, Conan, and by the looks of things, Castlevania.
5) There are unfortunately a few other superficial things people are picking up on, like the red orbs for XP from DMC and God of War, and the green orbs/blue orbs to increase health/magic.
God of War did not invent the 3D action genre, but it does have its own unique conventions, most of which contribute to it being the most popular 3D action game. It seems very very likely that if Castlevania is choosing to imitate any 3D action game, it's going to crib from the most popular one, and from everything we have seen, that's exactly what they did.
Is that a bad thing? If they pull it off correctly, no. After all, tons of people's favourite Castlevania is little more than a wallpapered knock-off of another game. Denying the obvious inspiration just shows off a lack of familiarity with the nuances of the genre, though, in my opinion.
What's really going to be crucial is what they bring that is different from previous games in the genre. That will decide if Castlevania is a great game, a good game for Castlevania fans, or just another also-ran. We'll know soon enough.
