X-Factor is scripted, but not to the level that you're thinking. I don't think Natalia Kills would intentionally risk torpedoing her career by coming off so delusional and hateful for the sake of an X-Factor NZ script. And, make no mistake, this is definitely not a good moment for her career.
It's entirely scripted and staged, the bloke wouldn't have even had a say in how he was dressed which conveniently fed into the very obviously pre-planned rant.
Show gets publicity, he gets sympathy votes, apology after "the public has spoken", and everything carries on as normal.
Anyone worried about the integrity of their career isn't appearing on X-Factor in the first place, they are going where the easy money is and where Cowell is concerned that means doing your bit no matter what.
This is X-Factor New Zealand, I don't think it Simon Cowell has an ounce of his being caring about this version.

Seems like "disgusting" is NeoGaf's favourite word this year. "Disgusting this", "Disgusting that". "[Insert name here] is so disgusting". "That is disgusting" "I'm disgusted" etc etc.

I think you're overestimating how much these shows care about the contestants.
It's about the judges getting what little exposure/paycheck they can, and ratings for the show. But they don't give a shit about the individual contestants. None of the judges, especially those judges with burgeoning singing careers of their own, are going to risk setting their own careers on fire just to be a psycho bad guy for a script to uplift a contestant.
Who said anything about caring about the contestants? They don't, but they are intrinsic to how the show works.
X-Factor ramps and de-ramps contestants as each week go by, they all have a life-expectancy and 3-arc stories. It's incredibly stage-managed to get the desired results for the best television and keep the commercially viable ones in till the end.
The judges are characters, the contestants are characters. The contestants just don't get to decide how they're portrayed or how long they last. That's all done with costume, song-choice, staging and the judge's comments. All of which is out of their hands and pre-planned.
A judge playing the villain is all part of it, they are well-aware of it, and no one has set their career on fire apart from in the eyes of those caught up in the faux-drama whose attention will very quickly shift to something else.
I agree with you on the nature of how the show is staged. I just don't think it's completely scripted drama, though.
Like, I'm pretty sure Natalia and Willy are on the show with the intention of being the villains. But I also think that they're just vile enough, and completely lacking in self-awareness, for that moment to have been real. I doubt there was a cue card in front of Natalia on that table saying, "Criticize contestant #31 for looking like your husband."

But only someone really desperate would agree to be a part of a scripted bit that makes them look like they are both clueless and heartless as well as deluded about their level of fame and importance. How many fans do either of them gain from this? How do they gain anything from this other than perhaps a little more money from the show and hopes to continue to be asked back?

I think you're making the common mistake of assuming that just because much of reality TV is produced and manipulated, therefor every word that's said is scripted. That's almost never the case. Most people aren't actors. They can't deliver a line that's been fed to them to save their life.
