Im so glad someone has asked this question! Ive seen more than a few people misunderstand our submission system, so heres the scoop.
Submissions pit two people against each other in a struggle that takes into account many factors. First, the offensive fighters submission skill and the type of submission being performed are considered. The higher a fighters Submission Offense and the more advantageous the position from which the submission is attempted, the higher the likelihood the submission will succeed. Thats why some people have noticed in our demo that Mauricio Shogun Ruas triangle submission from mount is easier than other submissions, like the knee bar from guard or the kimura from half guard. Also, the method the offensive fighter uses to sink in the submission plays an important part. There are two ways to execute a submission mashing the face buttons or rotating the right stick, a maneuver we call The Shine. In all cases, The Shine is going to be a better method to sink in a submission. Make sure you rotate that stick fast! The faster you rotate the stick, the higher your chance of success.
Its the defensive side and how players deal with submissions that I think confuses a lot of people. Similarly to the offensive fighter, a defensive fighter has stats that influence how successful he is at getting out of submissions. But in the defensive fighters case, they have two different stats Strength and Submission Defense and which state is used depends on which type of escape is performed. Brute force escapes, which are performed by rapidly mashing the face buttons, only take into account Strength. The other type of submission escape, Technical Escapes, which are also executed via The Shine, only look at a defensive fighters Submission Defense. As a defender, your best bet is to know which of these two stats is higher and to utilize the escape suited to that higher stat.
There is another extremely important factor in the success rate of a submission, and that is the defenders energy level. I have seen many people incorrectly assert that the best way to execute a submission is to weaken your opponent by beating him up. This is simply not true! Energy is not lowered by hurting your opponent; stamina is the answer. Energy is only depleted when your opponent performs actions; running, striking, transitions, etc. all temporarily lower energy levels, and the lower your opponents energy level, the more vulnerable he is to submissions. We didnt want fighters coming out and submitting people instantly, simply because they have a higher Submission Offense. We feel this would be very frustrating for players (and yes, there are fighters in the game with higher Submission Offense than Shogun and lower Submission Defense than Chuck Liddell, so there will be matchups where submissions are a bit easier than others). For example, Brock Lesnar has extremely high Strength and Standing Striking Offense, but even he cant just one-punch KO everyone in the game at will. It just wouldnt be fun, and we just dont think itd be fun with submissions, either.
My suggestion would be for submission fighters to pay close attention to what actions their opponents are performing to see when a submission opportunity presents itself. If you land a takedown and your opponent immediately starts spamming transition attempts or has just delivered a flurry of strikes and left himself gassed, this means hes using up a lot of energy and thus will be vulnerable to a submission. However, if the opponent is playing a calmer strategy and is perhaps only attempting to protect himself while throwing carefully timed strikes, submitting isnt going to be a very viable option.

But still that doesn't explain why button mashing doesn't work either. In the interview the devs said they didn't want fast submissions. But come the fuck on, if I have beaten my opponent nearly to death while I still have plenty of stamina/energy and not a bruise on my body I should be able to submit the guy without frantic circles or button pressing.

the amount of fights that end in guillotines, triangles and armbars in the first round a reasonably high.

Analyst predicts two million unit sales for "UFC 2009 Undisputed"

While video-game publisher THQ finds itself bleeding money with multi-million-dollar losses and workforce cuts, relief could be on the way with this month's release of "UFC 2009 Undisputed."
One analyst mentioned in a recent Bloomberg.com piece expects more than two million units of the video game to be sold in nine months.
The game, available on the PlayStation 3 and Xbox 360 platforms, retails for $59.95.
The analyst, Todd Mitchell of New York's Kaufman Bros., predicts the UFC receives "17 percent of sales or a guaranteed minimum," according to the report.
Shares of THQ, which traded at more than $22 each a year ago, now trades at less than $5. The company found early success with WWE titles that have generated more than $1.5 billion in sales over the past decade, though recent titles have flopped for the company.
The new UFC game, which is a part of a three-year agreement with THQ, has earned plenty of buzz and positive reviews ahead of its May 19 release date. (For more on the game, check out MMAjunkie.com's on-site video-game reviews from events in London and Montreal.)
"UFC 2009 Undisputed" is rich in real-life details with more than 80 current or former UFC fighters, UFC broadcasters Mike Golberg and Joe Rogan, UFC ring annoucer Bruce Buffer, ring girl Arianny Celeste, and various fight-night officials and trainers. Forrest Griffin appears on the cover of the U.S. version of the game, and Georges St. Pierre graces the cover for the Canadian version.

How many of these techniques have you tried yourself?
Mask, Skyscrape and Punk Ass of Tapout are the last three playable characters on the UFC 2009 Undisputed Roster. Along with Efrain and Bader this makes 85 playable characters. The idea was almost reconsidered when Mask died, but after talking with the other two they decided it would be best to keep him in.
I'm pumped Mask is in the game, he was in the old ones and his legacy will further live on this way.

edit: The article also goes on to say that in clearing up some confusion about the extra 2 characters you get when you pre order the game from Game Stop. It states that the pre ordered copies are actually fabricated different, to include Escudero and Bader on the game as opposed to getting a code and immediately downloading them offline. THQ Officials say they will be available as DLC 90 days later free of charge. These are they only planned downloadable characters.
With two years remaining on its contract with the UFC, THQ is already hard at work on the follow-up to "UFC 2009: Undisputed." Future incarnations are expected to feature more downloadable characters. Company officials cited UFC light heavyweight prospect Jon Jones as the perfect example of the type of character they would have loved to create after the original deadline for roster completion had passed.
