Spyro Reignited Trilogy is fantastic. I really, really enjoyed going back to the games after so long. I don't think I could ever return to the originals.
Crash Trilogy is a mixed bag, but Crash 1 at least is replayable now thanks to QoL improvements. I tried multiple times to replay it since release, but never went far due to the fact that you must play levels flawlessly to get the gem.
Zelda: The Wind Waker on the WiiU is the better version of the game hands down. I can't see a single reason to replay the GC version. The GamePad alone as an immediate-access inventory is literally a gamechanger.
Metroid Prime 1 and 2 on the Wii. The free-aim system has its limitations because the games weren't made with it in mind, but the advantages far outweigh the drawbacks. Returning to the GC originals was pretty rough in the beginning, and while you adapt quickly, the limited camera freedom is hard to go back to. The lock-on and the C-stick to change weapons are still superior to the Wiimote controls, though.
Dragon Warrior and Final Fantasy anything (well, almost). Basically no reason to return to the originals except for historical purposes, when there's so many better versions to choose from. FF6 is an exception, ofc, and there still isn't a DQ8 remaster that does complete justice to the original in terms of graphics.
Metroid: Samus Returns. Metroid 2 is very, very rough. The zoomed-in camera is its worst problem, because the game is solid, but the remake is the better game even if it gets some things very wrong.
La-Mulana. I've only seen videos of the original, but yeah... the remake is one of the better games I've ever played.
Kingdom Hearts 1 and 2. 1 especially. No reason whatsoever to replay the PS2 original with unskippable cutscenes.
