There are 4 that spring immediately to mind:
Ace Combat Collection (4, 5, Zero).
Even a simply remaster job rendering at 1080p with better textures would be enough for me. An update like what TLOU got would be amazing, though. I've been playing Ace Combat Infinity, so if Bandai-Namco brought up the games to the level of ACI, I'd be there day 1.
Final Fantasy XII: International Zodiac Job Edition.
If you've ever seen screenshots of FFXII emulated, you already know how this already gorgeous title shines when rendered at a higher resolution. If not, go find some pictures. On top of the delicious FFXII art at a higher resolution, we'd also be getting the IZJS improvements that made XII that much better.
Red Dead Redempton.
It's a testament to the skill of Rockstar's development team that RDR looks as good as it does, and manages to run are relatively ancient hardware. But there's no denying that RDR would kill folks dead faster than John Marston in a duel if they took what they've learned with GTAV and applied it to a RDR remaster.
Dragon's Dogma.
Itsuno and company pushed the PS3 and 360 close to the breaking point with this game. Anyone familiar with the game knows the cornucopia of technical issues the game suffers from, and yet the game shines in spite of all that. It's just that good. If they want to soup up the crazy character creation engine too, I wouldn't mind that at all.
