You don't need a mallet or a hammer. Just use a rock or a piece of wood.

And don't keep looking for more and more stuff to bring with you; every barely-useful thing you add just makes the whole experience that much more of a hassle, and you less likely to enjoy yourself or do it as often. Especially important if you were actually going to be carrying your gear on your back, of course, but even for car camping like you're planning this is something to keep in mind.

Try bringing some ice cream to eat after you set up your tents and stuff..it'll taste really, really good!
 
Along with toilet paper, consider a small garden spade/trowel. Stick the TP on the handle and keep it as a unit inside the door of the tent. To save space, just bring a quarter-roll or less of TP.

It'll let our meat defrost at a reasonable rate, but I doubt ice cream will survive the 3-4 hour trip, unfortunately :(

EDIT: Sorry for replying like that. I thought you were being sarcastic. Australia isn't very kind to ice cream.
 
I decided I'd bump this thread and give an update on how things went. A few things of note:

1) We did end up bringing ice cream. It melted by the time we got there but it was delicious all the same
2) We saw a Wedge Tail Eagle - awesome
3) Using a tarp and some rope to make a privacy screen for a latrine isn't fun. Neither is filling that latrine with dirt at the end of the trip
4) I dug a fire pit, surrounded it with bricks (I found a pile of them on the property) made a fire and it was awesome
5) So are smores. Our first taste of smores was divine.
6) It rained late at night on both nights. We bought an awesome tent.
7) The rake was a good idea
8) We brought waaaaay too much food with us, some of which we had to throw away
9) Always remember to bring a jacket when you go bushwalking
10) If you stand too close to the fire when cooking, your shirt ends up smelling of smoke
11) Camping showers, while good in theory, are tough to set up
