I think that the line between being a soldier/firefighter/cop and a "crocodile hunter" is pretty defined if you ask me. There is a purpose to putting your life on the line if you are a cop, soldier or firefighter. Saving a human life? Serving a country? How does tampering with dangerous animals for television specials fit in with that?
He wasn't dangling his kid infront of the croc, he was holding his kid while doing his act. The child was as safe as possible, held away from the croc.
