Especially frustrating since Im a chef, and I lived with people that would rather eat cold Chef Boyardee raviolis from a can than take the time to cut a vegetable.

Well of course, but I always throw that rice away as part of my ritual, then fry some dry risotto rice in butter for a bit until it's golden, then add chicken stock (or water) ever so gradually while stirring.
