The Switch should "cast" a second screen to the dock

Easy fix: put an active USB hub in between.
I'm not sure the Switch has the power to do 2 different 720p screens. Not on relatively demanding games anyway.
And USB C hubs aren't that cheap.

Well, not really. The gamepad was also a controller, which your phone is not. The gamepad and Wii U were also connected through a proprietary modified wifi that I imagine isn't as cheap as regular wifi, in order to reduce latency. The phone could display a map or some other passive screen, but that's about it.

Justify this by showing me a good game where the second screen was an integral, irreplaceable part of the experience.
The only one that comes to mind is Wonderful 101 and people were pretty divided about it. Pikmin 3 was pretty good but I don't think it's irreplaceable.
Other games displayed maps/inventory, or straight up mirrored the tv screen, so yeah I'm not sure why anyone would want this honestly.

Depends on your definitions of good I suppose and integral. Splatoon 2 shows it's not too hard to work around gamepad implementation.
 
I think they need to do something like this or ease the restrictions on developers who want to program for the touch screen. It's a better touch screen than they've ever had. It's a crime not to allow devs to fully exploit it due to console equivalency.

Seems to me if Wii U games were ever VC'd on the Switch it would only work for games where you had to hold select ('-' button) to change screens. Most would start in Gamepad mode so you can see the game off the bat, but then it would show you the gamepad inventory/screen etc after holding Select for 5 seconds.
 
I was typing up a decent length post in agreement with you, then realized that wouldn't work in portable mode.

I think in this case it's more up to the devs of Wii U games to at least allow the user to pick whether they want to play the game using a second screen for convenience or not.

With the exception of Game & Wario and Nintendoland, none of the other games really make "integral" use of the gamepad. Pikmin 3 used it as a map which was very handy, but the game paused itself anytime you used it so that's hardly impossible to implement on the main screen. Wonderful 101 never required its use, you were able to switch between which screen was shown on the TV at any point for the few segments where they entered interiors. Captain Toad only used it for the touch and mic, and those could probably be integrated in some other way.

Nintendoland was great.

I really enjoyed some of the second screen gaming moments, but I think this would be a pretty poor implementation of it. I'm sad to see second screen go, Sony tried it too with LittleBigPlanet2 and Vita second screen, that was fun too, but that also seems to have been a dead end. Some of the multiplayer stuff might be replicable through multiple Switches, so there's hope I guess.
