In no particular order:

Duke Nukem 3D: this game defined my childhood. It had a great sense of humor, smart level design, a lot of tiny details and really cool weapons.

F.E.A.R.: to me, the best FPS ever, right there with Duke3D. The shooting mechanics are top notch, slow mo is amazing, the horror atmosphere is fantastic, the flying kicks are cool (even if I rarely used them), and it can get truly scary at times.

Grand Theft Auto: Vice City: pure 80's goodness, coupled with the best soundtrack ever, a beautiful (albeit small) city to explore, fun driving mechanics (arcade as fuck, but to me that's a great thing), memorable missions and interesting story. And how could I forget
that Commodore 64-like intro?

Max Payne: probably the best story I've ever seen in any game. It's full of references to Norse mythology, and the writing is amazing, as are those cutscenes in the form of comic strips. Also, the graphics still hold up great today, at least in my opinion, and
the title track is beautiful.
- for my fifth game I can't decide between
Silent Hill: Shattered Memories,
Deus Ex,
Twinsen's Odyssey and
Super Paper Mario, so I won't choose one.
Mass Effect and
Bit.Trip Runner (or maybe
Flux) could be valid options too, as is
Jazz Jackrabbit 2.

Jedi Knight II: Jedi Outcast, I'm ashamed of myself.
