The Photo Gallery app is actually very slick. It's still just a photo viewer, but it's far more polished and pleasant to use than the XMB's built-in one.
I imagine this is aimed more at the Japanese audience than at the American one, as I can't see this being much of a selling point for people to pick up a PS3, but if you're into photography and tech (as the Japanese are famous for being), it really is well done.
Edit: It looks like they did some improvements to the PS3 web browser as well. Under 2.53, bringing up Slashdot would always lock the browser for some period of time, and would keep things partially hung up even after managing to retreat to the XMB. The 2.60 browser doesn't have this problem.
Edit the 2nd: Whoops, spoke too soon. It took longer while lingering on Slashdot, but the 'JavaScript Error' message finally came up and everything locked up for awhile. It does look like they made some improvement, as it behaved better for a little while, I was able to browse the whole page and all, but it eventually went wonky, before seeming to partially recover.
Sure would be nice if they would ditch NetFront for a WebKit based browser.
