Look at the adrenalin shot scene. He really asked Lance if he needs to stab Mia multiple times like a maniac.
Also Jules knew he had to change or he would die. Jules changed.
Vince is dumb and doesn't realize that he needs to change too. He dies.

None of the things you listed make him a bad character though.
Vincent, or Butch? Vincent doesn't show a short temper in PF. He does panic, but that's understandable due to the situations he was in. Butch was a fucking psycho.

That's kind of the point, isn't it? You're sold early on the idea that he's a badass once he 'gets into character' and helps Jules kill the guys who stole the case, but as you spend time with him you learn he's an dopey, careless, poser junkie. It's fine to have unlikable characters as long as you recognize they're well constructed. Vincent fills that role perfectly.
