Halo 2 Scarab Gun

The Halo trilogy in general is on a whole other level than most games in terms of easter eggs. This page lists most of the more well-known, but Bungie devs explicitly said that they threw so many little interconnected references in that even they probably wouldn't find things because they forgot about them. If they count, the Terminals from Halo 3 are pretty amazing. And the holdout Firefight-style scenario you have to beat to get the IWHBYD skull in Halo 2.
