My favorite is probably Brie because it goes so well with so many things i already enjoy and it taste so good.

TJ's cheeses are delicious but all come from outside purveyors. TJ's isn't in the cheese-making business, they're more in the duration and re-labeling business for the most part from what I understand. So they have a ton of awesome products but discerning their providence can be tricky.

I had some of Hook's 20 year cheddar earlier this year and it was phenomenal. My go to cheese is 3+ year old Gouda. It starts to get a texture and consistency similar to parmesan. I buy mine from a local shop, but if you don't have much access (I live in Wisconsin), Trader Joe's has a 1,000 day old Gouda. Same thing, but I haven't tried it. Otherwise, Hook's makes a 12 year cheddar that is damn good.
