What's your signature dish?

Burnt water.


I make some pretty good yeast-leavened whole wheat pancakes, but I stopped eating them due to my increasingly-desperate attempts at losing weight.
 
Got a family recipe for muffins. Best muffins ever.

Kind of funny because I'm not really great in a kitchen, except for that recipe. I nail that one every time. Because that recipe is mine now, I'm its caretaker and I know how to make the world's best muffins... in my opinion.
 
- Barbecue chicken & rips (smoker).
- Bolognese with self made noodles.
- Tiramisu
- Semelknödel (bread dumplings) with wild mushrooms (self collected)

Always able to bring a smile to my family when I cook one of those on a Sunday.

But my most favourite dish is Knödel, Roulade, Rotkraut (dumplings, filled beefrolle and red cabbage). My wife and mother make the best ones. Yummy!

These dishes I do regularly. I also cook salmon a bit but also over cooked them at times.

I’m a decent cook (although nowhere near my Mom or Grandma’s cooking in terms of skill) so I don’t have just one particular dish. I have several. From soups to gyoza to hummus to egg dishes. Often I just whip something up randomly and people would ask for the recipe. I come from a region known for having amazing cooks and I think that had a profound influence on my tastebuds. I’m hard to please—and same goes for my own cooking.

Teach me senpai!

I’ll teach you hummus and you teach me oyakodon and/or angel hair pasta! (I admit I am terrible at pasta as it’s not in our culture). Also, how do you get the pasta al dente without drying it out?

Anyway, my hummus recipe in a nutshell:

- A couple of cans of chickpeas, drained (I use canned for convenience)
- a spoonful of toasted sesame seeds (original recipe calls for tahini but as I can’t source that I sub sesame seeds and EVO which work great)
- extra virgin olive oil (EVO)
- A clove of garlic (or two depending on how much you love it)
- Lemon juice (at least half a lemon)

Instruction : just blend it all in the food processor but add a bit of the water from the chickpeas and some EVO to help it along. Get it nice and smooth. But most importantly, taste it often! I often make adjustments (adding a bit of garlic, a bit more lemon juice, EVO, etc) as we prefer, a garlicky, lemony version. The toasted sesame seeds also give it a nice aroma in the mouth (at least for me). I’ve used store-bought toasted sesame seeds but untoasted seeds literally put in the toaster for a couple of minutes had an even better aroma. Don’t be afraid to add a dash of pepper or a pinch of salt if need be.

You can make variations, like taking out the sesame seeds and lemon juice and putting in sun dried tomatoes. I add a bit cumin to mine (optional) and some people like how it tastes like a healthy nacho dip.

It’s probably not a recipe loyal to the original but I like the results so far. You can use chickpeas you boiled yourself but personally I find them too bland. YMMV.

Maybe Japanese curry? That's the only dish I would confidently serve to others.

And even that is mostly cheating with an instant pot.

I also made some pregnant-lady-friendly tiramisu the other day that turned out surprisingly good despite not having caffeine, raw eggs or alcohol. The recipe I followed was good.

I roast fowl most excellently. I am a frequent quest at friendsgivings on the condition of bringing turkey or chicken. Also make a spicy lentil stew that can be double as a dip depending on what I add.

I don't have it in English, unfortunately, and translating a recipe with how metric uses mass and imperial uses volume is... unlikely to produce the same muffin since I have no idea how to convert it.
 
Bacon, egg and cheese bagel. I eat it probably for half of all my breakfasts, so it's by far the dish I make the most often.
 
Tuna Taretare, it's incredibly easy to make but I love cooking with raw fish whenever I get the chance. Also people keep asking me to bring / make it so that's gotta make it a signature right?
 
I worked in my dad's kitchen for 6 years so I picked up a few things, but the best thing I learned there was how to season food properly so I can make the most basic-sounding stuff into something pretty decent. Such as:

Tuna Pasta Salad
Mac and Cheese
Spicy peppered chicken w/ rice in stock
Curries (all sorts)
8-hour Chilli

I've also been known to bash out some decent desserts and I like baking all kinds of cookies too. I recovered from surgery recently and as a thank you to my wife's work for allowing her a lot of time off to help me recover I baked a hell of a lot of cookies for them. They still keep asking her if I'm baking more to bring in.
 
Hmm, I make a mean red thai curry, chicken madras and a great Tajine. Signiature I'd probably pick chicken Tikka Masala. I just love curry in general really, and so easy to make yourself.
 
Eating good food is a bit of a hobby of mine and I'm fortunate enough to have eaten in some of the world's best restaurants, and I've only just recently started getting back in to cooking myself after getting a new ice-cream maker and sous-vide immersion cooker.

These aren't exactly 'signature dishes' of mine as I'm not exactly a chef, though I did produce these as a bit of a treat for my sister in-law a couple of days ago.

Salmon, beetroot risotto and horseradish foam:

Steak Cutlets and probably Strawberry Shortcakes LOL

yeah... i'm usually the one cooking for everyone at my place lol

I love cooking and try a lot of stuff, but I get the most requests for a spinach dip that I've been making for years.

#1 chili. When family visits they ask me to make it every time.

2nd - tacos de carne deshebrada

3rd - open fire pizza
 
I make the best broccoli cheddar soup and mashed potatoes.

Like, I'd bet most people to beat me in a taste test.
