They had me at Fried Chicken. Actually, I loved it from the beginning, but that was the episode that solidified it for me.

Agreed I loved the show pretty much right away. But I can agree with the feeling that it does improve about midway through S1 and gets even better from there.
I think your next episode is The Dentist, which is one of the best episodes of the entire series but also one of the last standalone ones before it goes full serialized.

Aren't all the CSI shows in the same world? He played two different characters in two different CSIs in 2010...Yeah, I'm looking at IMDB and seeing how much stuff he's in and I just didn't recognize him. It's crazy!

Justified is an amazing show although its quality varies significantly from season to season.
Season 1 - Great pilot, followed by a bunch of bland case of the week episodes (though I do like the one with the dentist), picks up significantly in the last handful of episodes
Season 2 - Overall one of the best seasons of television I've seen. Starts off a little slow as it sets up the season's arc but everything from episode 5 on is incredible.
Season 3 - A ton of fun but ultimately pretty messy
Season 4 - Great season, holds together better than season 3. Drags for 2-3 episodes in the middle but starts and ends very strong.
Season 5 - Something went wrong here. This season is just missing something. The villains aren't compelling at all and every character is stranded in dull plotlines that emphasizes their worst qualities.
Season 6 - Great return to form, one of the better final seasons ever. Last half of the season is impeccable.
And I remember not being taken with most of the side characters at first, but I loved all of them by the end. Tim and Rachel are the greatest.
