Why do people drink while chewing food?

If I cut a chunk off a wedge of cheese, drinking some soda makes it taste even better.

Some foods can be enhanced by particular drinks.

Saliva is supposed to do that for you!!!!!!!!!!
Which sometimes needs reinforcements.

And also why I wouldn't do this without it being water, or when relevant milk or another accompanying liquid (a soup with bread perhaps?) If someone's doing this with soda on, well, anything... no, just no.
 
Sometimes when I eat, it's like my esophagus refuses to do its job and it just stops halfway down, but then it keeps trying to push the food down fro the upper muscles, which compacts the food in that spot so it is really stuck, then it's like a horrible experience of trying to swallow liquids, which don't swallow, so they come back up, and it's like choking but not choking because I can breathe. It's just so damn unpleasant, and eventually I can get it down.

I don't know why this happens, as it doesn't really seem related to whether or not I chew properly and get enough saliva through it. However, washing it down with some drink or even mixing it with drink if it's like a cake or something typically prevents it. Unfortunately I'm poor in America and can't get coverage for any medical, so I can't get it checked out, though I found like four or so things it can be and they all said they are untreatable and that it generally gets worse over years. Wonderful.
